TERROIR
Our vineyards, planted from 2004 to 2006, are located in the scenic areas surrounding Poreč, including Funtana, Mornarica, and Bašarinka. Situated at altitudes of 20-110 meters, they feature hilly terrains with diverse sun exposures: south-southeast, south, and southwest. The soil is the famed Istrian red soil (terra rossa), ideal for producing richly flavored grapes. We use the Guyot training system to ensure optimal grape quality and keep yields low, around 1.0-1.2 kg per vine, concentrating the essence of our unique terroir in each grape.
VINIFICATION
Our Cuvee Castello, a meticulously crafted blend, consists of 60% Merlot, 30% Cabernet Sauvignon, and 10% Cabernet Franc. The essence of this wine is captured in its elegance and finesse. We harvest the grapes at the peak of maturity, ensuring the development of well-rounded and deep flavors.
In the winemaking process, we ferment each variety separately at a controlled temperature of 28°C. The maceration period varies between 12 to 15 days, tailored each year to achieve the desired level of extraction. A key step in our approach is the exclusive use of free-run juice, which allows us to avoid the harsher tannins that can be extracted during pressing.
The wine undergoes malolactic fermentation concurrently with the alcoholic fermentation, further smoothing the texture and enriching the complexity. Aging is a crucial part of our process: the wine matures for 12 months in French oak barrels, with a careful selection of only 5-10% new oak. The majority is aged in neutral barrels to limit the oak's influence and maintain the varietal's true character.
Our focus is to create a wine that embodies the harmony and elegance of its components, with a subtle oak presence that complements rather than dominates the blend. This thoughtful vinification results in a Cuvee Castello that is a testament to the sophistication and unique qualities of our vineyard's terroir.
TASTING NOTES
Cuvee Castello presents a deep ruby color, hinting at its richness. The nose combines ripe red fruits from Merlot, blackberries and a hint of green pepper from Cabernet Sauvignon, and a light spiciness from Cabernet Franc, all underlined by a subtle vanilla and smoky cedar from oak aging. On the palate, it's full-bodied with a harmonious blend of dark fruits, structured depth, and a touch of chocolate, leading to a long, satisfying finish with well-rounded tannins. Overall, this wine is a sophisticated blend that perfectly balances fruit, spice, and oak, showcasing the elegance and complexity of its varietals.
