Vinification
Grapes are destemmed prior to gentle pressing. After primary fermentation, the base wine is bottled with a liqueur de tirage to initiate the traditional-method second fermentation in the bottle.
Maturation & Aging
18 months on the lees, followed by 18 months of bottle aging prior to release.
Visual & Aromatic Profile
A bright straw-yellow colour with golden reflections. Expressive aromas of ripe orchard fruit and subtle floral notes.
Palate
Ripe peaches and pears lead the palate, supported by nuances of toast, lightly roasted bread, and fresh brioche from extended autolysis. Refined, fresh and persistent.
Food Pairing
Ideal as an aperitif and with cold seafood starters, shellfish, crustaceans, salmon and delicate white meats.
