Distillerie Fove is a Québec boutique distillery dedicated to the development of Acerum—a protected geographical indication (IGP Acerum du Québec) maple eau-de-vie made exclusively from fermented maple syrup—while also crafting a focused range of small-batch rums.

Founded in 2021 by scientist-turned-distiller Corinne Cluis, Fove applies rigorous fermentation science, precise distillation, and controlled aging across its portfolio, revealing maple and cane spirits in dry, structured, and aromatic expressions, far removed from folkloric interpretations.

Fove’s Acerums and rums are presented in a refined, contemporary design that reflects the house’s positioning: minimalist, sophisticated, and aligned with the premium international spirits landscape. This aesthetic coherence reinforces Fove’s ambition to establish Acerum as a credible, high-end category while positioning its rums as equally expressive craft spirits.

Already recognized as a reference producer within Québec’s leading bars and gastronomic venues, Fove positions Acerum as an emerging spirits category designed and positioned for long-term international growth.

At Wine Paris, Distillerie Fove invites European distributors interested in building and structuring the Acerum market, while also representing distinctive craft rums, to collaborate in introducing these spirits to the European market.
